Simple Penne and Meatballs Recipe- Sun Basket
The moment you walk into the kitchen and the smell of a home-cooked meal fills you up with good memories, the love of family and friends gathering together, and the taste of food that you can’t get anywhere else.
We get all the love and happy feels when we think of a homemade dinner.
Yet…we stopped cooking as often at home because we lack the time and energy.
How can we slow time down so we can be at home enjoying the company of loved ones over a home cooked meal and still have time for our daily busy schedule?
Recently in one of my Sun Baskets, a meal delivery service, I received a penne with meatballs recipe and it was so delicious and simple to make that I realized I had to share it with you all. Recipes like this one are perfect for getting back in the kitchen, making delicious homemade meals, without sacrificing our time and sanity.
So today, I am going to share this recipe, Simple Penne with Meatballs, from Sun Basket and I hope it helps you slow time down and fall in love with the moments that cooking at home with your family create.
Let’s get started.
First, gather & prep all the ingredients. (The ingredient list can be found below).
Next, boil the water for the pasta. When the water comes to a boil, cook the pasta according to the package, around 6 to 9 minutes for the penne. Then begin, making the meatballs.
To make the meatballs, combine the ground pork and beef, one egg, panko/breadcrumbs (whole wheat), parmesan cheese, and the meatball spice blend (granulated garlic, dried oregano, and onion powder).
It’s time to roll up our sleeves. Put all the ingredients in a mixing bowl and with wet hands combine until completely mixed.
To finish the meatballs, again with wet hands, take the mixture and form into 1in meatballs. Then cook the meatballs in a frying pan 3 to 4 minutes on each side. After the meatballs have cooked on each side, add the marinara sauce and bring to a boil. Then reduce to a simmer, cover, and cook until meatballs are cooked through, 3-5 minutes.
While the meatballs cook, by now the penne should have finished cooking so drain the pasta and set aside.
While the meatballs cook & the pasta is finished, make the caesar salad. Put the chopped lettuce, croutons, dressing, and parmesan cheese in a bowl and toss.
After the caesar salad is tossed, the meatballs should be done. Toss the meatballs and marinara with the penne. Finally, you are ready to plate and serve.
Just place the penne and meatballs on the plate alongside the caesar salad and you are ready to enjoy.

¼ pound penne
5 ounces ground beef
5 ounces ground pork
1 pasture-raised organic egg
¼ cup whole wheat panko
Meatball spice blend (granulated garlic – dried oregano – onion powder)
2 tablespoons Parmesan

1 romaine heart
½ cup croutons
